to be. Risotto is a rich and creamy, traditional Italian rice dish
cooked with meats, seafood, vegetables, mushroom, cheese and
herbs. Master chef, Sumanta Chakraborty, and chef Davide Cananzi,
have masterminded an array of preperations on offer. Says Cananzi,
“No less than four to five months usually go into the making of
different varieties of dishes and we need to experiment with the
ingredients before finalisng the main menu.” Risotto lovers can
pick from a host of preperations like Spinach and Sun-dried Tomato
Arancini with Creamy Basil Pesto, a salad of arborio with olive
oil poached peppper, resins, almond and garlic. Else you may try
delicious the Cheese Cake with Arrabiata Sauce and Gilbert Ragu
for staters. What better than Risotto with chicken, Porcini and
Broccoli, or Sardinian Risotto with Minced Mutton, red wine,
saffron and tomatoes or Risotto Isola Style with Sausage and Peas
or even lip-smacking italian pizzas for the main course.
Vegeterian needn’t feel left out. Cananzi would ask you to pick
from Milanese Risotto with Aubergine and pine nuts and Blueberry
Risotto with milky mushroom. You can even try simple preperations
like Risotto with roasted vegetables. Don’t forget to round it off
with Coffee Risotto with Caramelised Bananas.
